Ingredients:
1 lb ground beef
1 packet taco seasoning mix
1 cup water
9 flour tortillas (8-inch size)
1 can (15 oz) black beans, drained and rinsed
1 cup corn kernels (fresh or frozen)
2 cups shredded cheddar cheese
2 cups shredded mozzarella cheese
1 can (10 oz) diced tomatoes with green chilies, drained
1/2 cup sliced black olives (optional)
1 cup sour cream (for serving)
Fresh cilantro (for garnish)
Directions:
Preheat your oven to 375°F (190°C).
In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
Add the taco seasoning mix and water to the beef. Stir well and simmer for about 5 minutes until the mixture thickens. Remove from heat.
Spread a thin layer of the beef mixture on the bottom of a 9x13 inch baking dish.
Place 3 tortillas over the beef layer.
Spread half of the remaining beef mixture evenly over the tortillas. Sprinkle half of the black beans, corn, diced tomatoes, and olives on top.
Sprinkle 1 cup cheddar cheese and 1 cup mozzarella cheese over the layers.
Repeat the layers: 3 tortillas, the remaining beef mixture, beans, corn, tomatoes, olives, and cheeses.
Finish with a final layer of tortillas and sprinkle the remaining cheeses on top.
Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
Let the lasagna cool for 5 minutes before slicing. Serve with sour cream and garnish with fresh cilantro.
