Creamy Pepperoncini Chicken Skillet is a flavorful one pan dinner featuring tender chicken bathed in a rich, creamy sauce brightened by tangy pepperoncinis. It’s perfect for busy weeknights delicious, comforting, and ready in about 30 minutes.
Full Recipe:
2 tbsp butter
2 lbs chicken, cut into thin strips
1 tsp sea salt
1 tsp ground pepper
1 white onion, diced
2 tbsp garlic, diced
½ cup chicken stock
½ cup roasted red pepper, drained and sliced
1 cup heavy cream
½ cup Parmesan cheese, shredded
1 tbsp Italian seasoning
½ cup pepperoncini peppers, drained (sliced, rings, or whole based on preference)
Season and brown chicken
Melt butter in a large heavy pan over medium high heat. Season chicken strips with salt and pepper, then brown on all sides (about 8 minutes). Remove chicken and set aside.
Sauté aromatics
In the same pan, add diced onion and garlic. Cook until translucent and lightly browned, about 5 minutes.
Build the sauce
Pour in the chicken stock and sliced roasted red pepper. Let the mixture simmer until reduced by about half, around 5 minutes. Then, remove the pan from heat and slowly whisk in the heavy cream and Parmesan until the sauce is smooth.
Finish cooking
Return the pan to medium heat. Stir in Italian seasoning, drained pepperoncinis, and the browned chicken. Let the sauce reduce further until the chicken is fully cooked through (165 °F internal temperature), and the sauce thickens to your liking. Add more stock if needed to adjust consistency.
Serve
Once done, remove from heat and serve immediately over pasta, rice, vegetables, or enjoy it on its own.
