Full Recipe:
4 boneless, skinless chicken breasts
½ cup fresh cilantro, chopped
1 Tbsp olive oil
1 Tbsp lime juice
2 cloves garlic, minced
1 tsp cumin
1 tsp paprika
Salt and pepper, to taste
1 Tbsp honey
1 Tbsp soy sauce
Marinate
In a bowl, combine olive oil, lime juice, minced garlic, cumin, paprika, salt, pepper, honey, and soy sauce. Add the chicken breasts, ensuring they’re well coated. Marinate at least 30 minutes, or refrigerate overnight for deeper flavor.
Preheat
Heat a grill or stovetop skillet over medium heat.
Cook
Remove chicken from marinade and cook for 6–7 minutes per side, or until the internal temperature reaches 165°F (74°C).
Finish with Cilantro
During the last 2 minutes of cooking, sprinkle the chicken with chopped cilantro, allowing it to wilt slightly and infuse its flavor.
Rest and Serve
Remove from heat and let the chicken rest for a couple of minutes. Serve immediately, garnish with extra cilantro and lime wedges if desired.
