For the Salad:
2 seedless cucumbers, sliced
2 ripe avocados, diced
For the Dressing:
2 tablespoons fresh lime juice
2 tablespoons olive oil
1–2 tablespoons chopped fresh cilantro (or parsley)
1/2 teaspoon salt
Freshly cracked black pepper, to taste
1/3 teaspoon red chili flakes
1/2 teaspoon ground cumin
1 clove garlic, minced (optional)
In a large salad bowl, combine the sliced cucumbers and diced avocados.
In a small jar or bowl, whisk together the lime juice, olive oil, chopped cilantro or parsley), salt, black pepper, red chili flakes, cumin, and minced garlic (if using).
Pour the dressing over the cucumber and avocado mixture.
