The Fried Egg Quesadilla is a delightful fusion of crispy tortillas, melted cheese, and perfectly fried eggs. This dish offers a satisfying balance of textures and flavors, making it an ideal choice for breakfast, brunch, or a quick lunch. It's versatile and can be customized with various toppings to suit your taste preferences.
2 flour tortillas
2 large eggs
1 cup shredded cheese (cheddar, mozzarella, or a blend)
1 tablespoon butter (for frying)
Salt and pepper, to taste
Optional toppings: sliced avocado, salsa, sour cream, or fresh herbs
Prepare the Eggs: Heat a non-stick skillet over medium heat and add a small amount of butter. Crack one egg into the skillet, season with salt and pepper, and cook until the white is set but the yolk remains runny. Remove and set aside. Repeat with the second egg.
Assemble the Quesadilla: In the same skillet, place one tortilla and sprinkle half of the shredded cheese over it. Place one fried egg on top of the cheese, then add avocado slices. Sprinkle the remaining cheese over the avocado and top with the second tortilla.
Cook the Quesadilla: Cook for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted. Remove from the skillet, cut into wedges, and serve hot with your choice of optional toppings.
