These Banana Bread Bars are a delightful twist on the classic banana bread, offering a moist, tender texture and a perfect balance of sweetness and spice. Ideal for breakfast, brunch, or a midday snack, they bring comfort and joy with every bite.
3–4 ripe bananas (the browner, the better)
1½ cups all-purpose flour (or whole wheat flour for added nutrition)
1 teaspoon baking powder
1 teaspoon ground cinnamon
¾ cup brown sugar (light or dark)
½ cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
Preheat the Oven: Set your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
Mash the Bananas: In a large bowl, mash the ripe bananas until smooth.
Combine Wet Ingredients: Add the brown sugar and vegetable oil to the mashed bananas. Stir in the eggs and vanilla extract until fully combined.
Mix Dry Ingredients: In another bowl, whisk together the flour, baking powder, and cinnamon.
Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing to keep the bars tender.
Bake: Pour the batter into the prepared pan, spreading it evenly. Bake for 25–30 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
Cool and Serve: Allow the bars to cool in the pan before cutting into squares. Enjoy warm or at room temperature.
