Full Recipe:
4 large russet potatoes
2 cups cooked chicken, shredded
1 cup barbecue sauce
1 cup shredded cheddar cheese
½ cup sour cream
2 tablespoons chopped green onions
Salt and pepper, to taste
Bake the Potatoes: Preheat your oven to 400°F (200°C). Pierce the russet potatoes with a fork and bake directly on the oven rack for 45–60 minutes, or until tender when pierced with a fork.
Prepare the Chicken: While the potatoes are baking, combine the shredded cooked chicken with the barbecue sauce in a bowl. Mix well until the chicken is evenly coated.
Assemble the Potatoes: Once the potatoes are done, remove them from the oven and let them cool slightly. Cut a slit down the center of each potato and gently fluff the insides with a fork.
Fill the Potatoes: Spoon the barbecue chicken mixture into each potato, dividing it evenly among them.
Add Toppings: Sprinkle the shredded cheddar cheese over the chicken mixture. Return the stuffed potatoes to the oven and bake for an additional 5–7 minutes, or until the cheese is melted and bubbly.
Serve: Remove the potatoes from the oven and top each with a dollop of sour cream and a sprinkle of chopped green onions. Season with salt and pepper to taste before serving.
