Ingredients:
1 lb beef stew meat, cut into bite-sized pieces
2 tablespoons olive oil
1 onion, chopped
3 cloves garlic, minced
3 carrots, sliced
2 celery stalks, sliced
1 cup green beans, chopped
1 cup corn kernels
1 cup peas
1 can (14.5 oz) diced tomatoes
6 cups beef broth
1 teaspoon dried thyme
1 teaspoon dried basil
1 bay leaf
Salt and pepper, to taste
Fresh parsley, chopped (optional, for garnish)
Directions:
Heat olive oil in a large pot over medium-high heat. Add the beef stew meat and brown on all sides. Remove the beef and set aside.
In the same pot, add the chopped onion and garlic. Sauté until softened and fragrant.
Add the carrots and celery, cooking for about 5 minutes until they start to soften.
Return the beef to the pot and pour in the beef broth. Add the diced tomatoes, thyme, basil, bay leaf, salt, and pepper. Bring to a boil.
Reduce heat to low, cover, and simmer for about 1 hour or until the beef is tender.
Add the green beans, corn, and peas. Continue to simmer for another 15-20 minutes until the vegetables are cooked but still vibrant.
Remove the bay leaf before serving. Garnish with fresh parsley if desired.
