1 English cucumber, sliced
1 pint cherry tomatoes, halved
8 oz fresh mozzarella balls (ciliegine or bocconcini), halved
1 ripe avocado, diced
1/3 cup fresh basil leaves, chopped
3 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
1 clove garlic, minced
Salt and freshly cracked black pepper, to taste
Prepare the Vegetables and Cheese: Wash and slice the cucumber into thin rounds. Halve the cherry tomatoes. If using a large ball of fresh mozzarella, drain and chop it into bite-sized pieces; if using mozzarella pearls, simply halve them. Dice the avocado just before assembling to prevent browning.
