1 lb (450g) chicken breast, cut into bite-sized cubes
1 tbsp olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 red bell pepper, diced
1 cup jasmine rice, rinsed
1½ cups chicken broth
1 cup fresh pineapple chunks (or canned in water, drained)
2 tbsp low-sodium soy sauce
1 tbsp honey
1 tsp fresh ginger, grated
Salt and pepper, to taste
2 green onions, sliced (for garnish)
1 tbsp sesame seeds (optional, for garnish)
Sear the Chicken:
Heat olive oil in a large skillet over medium heat.
Add chicken cubes in a single layer.
Cook undisturbed for about 3 minutes until golden brown on the first side.
Flip pieces and continue cooking until golden all over and cooked through, about 5 more minutes.
Remove chicken to a clean plate and set aside.
Sauté Vegetables:
In the same skillet, add chopped onion, minced garlic, and diced red bell pepper.
