These moist banana bread blondies combine the rich flavors of banana bread with the chewy texture of blondies. They're quick to prepare and perfect for using up overripe bananas.
Full Recipe:
1 cup mashed very ripe bananas (about 2 large bananas)
1/2 cup salted butter, melted
1/2 cup light brown sugar
1 large egg
1 teaspoon vanilla extract
1 cup whole wheat flour (or all purpose flour)
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chocolate chips (optional)
Preheat Oven: Set your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
Mix Wet Ingredients: In a large bowl, combine the mashed bananas, melted butter, brown sugar, egg, and vanilla extract. Stir until well mixed.
Add Dry Ingredients: Add the flour, baking soda, and salt to the wet mixture. Stir until just combined; be careful not to overmix.
Add Chocolate Chips: Fold in the chocolate chips, if using.
Bake: Pour the batter into the prepared pan and spread it evenly. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Serve: Allow the blondies to cool in the pan before cutting into squares.
