For the Meatloaf:
1½ pounds ground beef (85% lean)
1 small onion, finely chopped
2 cloves garlic, minced
1 cup breadcrumbs
1 large egg
1 cup milk
1 tablespoon Worcestershire sauce
1 tablespoon ketchup
1 teaspoon dried oregano
1 teaspoon dried basil

For the Loaded Potatoes:
4 large russet potatoes
2 tablespoons butter
1 cup sour cream
1 cup shredded cheddar cheese (or cheese of your choice)
½ cup green onions, chopped
1 cup shredded mozzarella cheese (optional)

Prepare the Meatloaf: Preheat your oven to 375°F (190°C). Prepare the Potatoes: While the meatloaf is baking, scrub the russet potatoes clean and pierce each potato a few times with a fork. Bake the potatoes in the oven alongside the meatloaf for about 45 minutes, or until they are fork-tender. Alternatively, microwave them on high for 8–10 minutes, turning halfway through.
Mash the Potatoes: Once the potatoes are cooked, cut them in half lengthwise and carefully scoop out the flesh, leaving a small border around the edges. Place the scooped-out potato flesh into a mixing bowl and mash it with the butter, sour cream, salt, and pepper until smooth and creamy. Add 1 cup of shredded cheddar cheese and ½ cup of chopped green onions, mixing until well combined.
Assemble the Loaded Potatoes: Spoon the mashed potato mixture back into the potato skins, packing them tightly. If desired, sprinkle additional shredded cheese and chopped green onions on top.
