1 lb (450g) ground beef
1 lb (450g) ground pork
1 packet (1 oz) taco seasoning
½ cup crushed tortilla chips
½ cup milk
½ cup chopped onion
2 large eggs
½ cup shredded cheddar cheese
2 tbsp chopped pickled jalapeños
2 tbsp tomato paste
¼ cup salsa (plus extra for serving)
¼ tsp salt
¼ tsp black pepper
Fresh cilantro, for garnish
Optional: sour cream, avocado slices, lime wedges for serving
Preheat your oven to 375°F (190°C).
In a large bowl, combine crushed tortilla chips and milk. Let soak for 5 minutes.
Add ground beef, ground pork, taco seasoning, chopped onion, eggs, shredded cheddar cheese, chopped pickled jalapeños, tomato paste, salsa, salt, and black pepper to the soaked mixture.
Mix until just combined avoid overmixing to maintain tenderness.
Shape the meat mixture into a loaf and place it in a greased loaf pan or on a baking sheet lined with parchment paper.
Bake for 50–60 minutes, or until the internal temperature reaches 160°F (71°C).
Let the meatloaf rest for 10 minutes before slicing.
Garnish with fresh cilantro and serve with extra salsa, sour cream, avocado slices, or lime wedges, if desired.
