1 large English cucumber (or 3–4 Persian cucumbers), thinly sliced
8 oz imitation crab meat, shredded
1 ripe avocado, diced
1 tablespoon soy sauce (low-sodium preferred)
2 tablespoons Kewpie mayonnaise (or regular mayonnaise)
2 tablespoons whipped cream cheese (or Greek yogurt cream cheese)
1 teaspoon rice vinegar (optional, to mimic Kewpie's tanginess)
1 teaspoon sesame seeds (black or white)
Salt and pepper, to taste
