Full Recipe:
For the Crust:
2 cups graham cracker crumbs (about 14 sheets)
6 tablespoons unsalted butter, melted
Pinch of salt
For the Cheesecake Filling:
2 (8-ounce) blocks cream cheese, softened
1½ cups powdered sugar, divided
2 cups heavy whipping cream
½ teaspoon vanilla extract
Zest of 1 orange (optional)
1 (3-ounce) box orange Jell-O
1 cup boiling water
Prepare the Jell-O: In a heatproof bowl, whisk together the orange Jell-O powder and boiling water until fully dissolved. Set aside to cool to room temperature, approximately 30 minutes.
Prepare the Pan: Lightly grease a 9-inch springform pan and line the bottom and sides with parchment paper.
Make the Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and salt. Press the mixture evenly into the bottom and slightly up the sides of the prepared pan. Freeze for at least 30 minutes to set.
Prepare the Cheesecake Filling: In a large bowl, beat the softened cream cheese and 1 cup of powdered sugar with an electric mixer until smooth and creamy, about 2 minutes.
Whip the Cream: In a separate bowl, whip the heavy whipping cream, remaining ½ cup powdered sugar, vanilla extract, and orange zest (if using) until stiff peaks form.
Combine Mixtures: Gently fold half of the whipped cream into the cream cheese mixture until well combined. In a separate bowl, fold the remaining whipped cream into the cooled orange Jell-O mixture.
Assemble the Cheesecake: Spoon alternating layers of the cream cheese mixture and the orange Jell-O mixture into the prepared crust. Use a butter knife to gently swirl the layers together for a marbled effect.
Chill: Cover the cheesecake and refrigerate for at least 6 hours, or overnight, until fully set.
Serve: Before serving, remove the sides of the springform pan. Garnish with additional whipped cream, orange slices, or zest if desired. Slice and enjoy!
