Full Recipe:
8 ounces (225g) spaghetti or linguine pasta
1 pound (450g) large shrimp, peeled and deveined
3 tablespoons olive oil
4 cloves garlic, minced
¼ teaspoon red pepper flakes (optional)
Salt and black pepper, to taste
¼ cup dry white wine or chicken broth
2 tablespoons fresh lemon juice
2 tablespoons chopped fresh parsley
2 tablespoons unsalted butter
Grated Parmesan cheese, for serving
Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti or linguine and cook according to the package instructions until al dente. Drain the pasta, reserving about ½ cup of the pasta water.
Sauté Garlic and Shrimp: While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant. Add the shrimp, seasoning with salt and pepper. Cook for 2–3 minutes per side until the shrimp are pink and opaque.
Add Wine and Lemon Juice: Pour in the white wine or chicken broth and lemon juice. Let the mixture simmer for about 2 minutes to allow the flavors to meld and the liquid to reduce slightly.
Mix in the Butter: Add the butter to the skillet, stirring until it melts and combines into a smooth sauce.
Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing to coat in the sauce. If the sauce is too dry, add the reserved pasta water, one tablespoon at a time, until the desired consistency is reached.
Finish and Serve: Sprinkle chopped parsley over the pasta and season with additional salt and pepper to taste. Serve immediately, topped with freshly grated Parmesan cheese.
