Full Recipe:
1 tbsp vegetable oil
1 onion, chopped
3 cloves garlic, minced
1-inch piece of ginger, peeled and minced
2 green onions, finely sliced
¼ cup hoisin sauce
¼ cup tomato ketchup
1 lb lean ground beef
1 lb lean ground pork
1 cup soft breadcrumbs
1 large egg
3 tbsp soy sauce
½ tsp ground pepper
Sauté Aromatics: In a medium-sized non-stick frying pan, heat vegetable oil over medium heat. Add chopped onion, minced garlic, minced ginger, and sliced green onions. Cook for about 3 minutes until softened. Remove from heat and set aside.
Prepare Glaze: In a small bowl, mix together hoisin sauce and tomato ketchup. Preheat the oven to 350°F (180°C).
Combine Ingredients: In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, egg, soy sauce, ground pepper, and the sautéed aromatics. Add half of the hoisin-ketchup mixture to the meat mixture. Mix well until all ingredients are evenly incorporated.
Form Meatloaf: Transfer the meat mixture into a 9-inch by 5-inch loaf pan. Pat it down to ensure it's evenly distributed.
Bake: Place the loaf pan in the preheated oven and bake for 45 minutes.
Glaze and Continue Baking: After 45 minutes, remove the meatloaf from the oven. Drain any excess fat from the pan. Spread the remaining hoisin-ketchup mixture over the top of the meatloaf. Return the meatloaf to the oven and bake for an additional 15 minutes.
Rest and Serve: Once done, remove the meatloaf from the oven and let it rest for 10 minutes before slicing. Serve warm with steamed rice or mashed potatoes.
