This Spinach Stuffed Salmon combines the rich flavors of salmon with a creamy spinach and Parmesan filling, creating a delightful dish that's both elegant and easy to prepare. Perfect for a special dinner or a nutritious weeknight meal, this recipe offers a gourmet experience right at home.
4 salmon fillets (skin-on)
2 cups fresh spinach, finely chopped
1/2 cup cream cheese, softened
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1 teaspoon lemon juice
Salt and pepper, to taste
Olive oil, for cooking
Preheat the Oven: Set your oven to 375°F (190°C).
Prepare the Filling: In a medium bowl, combine the chopped spinach, softened cream cheese, grated Parmesan, minced garlic, lemon juice, salt, and pepper. Mix until well combined.
Prepare the Salmon: Using a sharp knife, carefully create a pocket in each salmon fillet by slicing horizontally, being careful not to cut all the way through.
Stuff the Salmon: Gently fill each salmon pocket with the spinach mixture, packing it in firmly.
Cook the Salmon: Heat a drizzle of olive oil in a large oven-safe skillet over medium heat. Place the stuffed salmon fillets skin-side down and cook for about 4 minutes until the skin is crispy.
Bake: Flip the fillets over and transfer the skillet to the preheated oven. Bake for 10-12 minutes, or until the salmon flakes easily with a fork.
Serve: Remove from the oven and let rest for a couple of minutes before serving.
