This Crockpot Chicken Breast recipe delivers tender, juicy chicken breasts every time, with minimal effort and maximum flavor. Perfectly seasoned and slow cooked, the chicken absorbs a rich blend of herbs and spices, making it great for salads, sandwiches, pasta, or as a main dish.
2½ pounds boneless, skinless chicken breasts (approximately 1.2 kg)
2 tablespoons olive oil
½ teaspoon salt
½ teaspoon freshly ground black pepper
½ teaspoon garlic powder
½ teaspoon paprika
½ teaspoon dried oregano
½ cup (120 ml) vegetable or chicken stock
Prepare the Chicken: Cut the chicken breasts in half lengthwise for more even cooking and to better absorb seasoning.
Season the Chicken: Season both sides of the chicken with salt, pepper, garlic powder, paprika, and dried oregano. Rub the seasoning into the chicken for even coating.
Set Up the Crockpot: Place the seasoned chicken breasts into the crockpot.
Add Olive Oil and Stock: Drizzle olive oil over the chicken and pour vegetable or chicken stock around the chicken breasts.
Cook the Chicken: Cover and cook on HIGH for 3½ hours or until the internal temperature reaches 165°F (74°C).
Rest and Serve: Once cooked, remove the chicken from the crockpot and let it rest for 10 minutes before slicing or shredding. Serve as desired.
