Ingredients
6 large eggs
1 cup shredded cheddar cheese
1 cup milk (whole or skim)
1/2 cup diced bell peppers (green, red, or both)
1/2 cup diced onions
1/2 cup cooked and crumbled bacon or sausage (optional)
1/4 cup chopped fresh parsley or green onions (for garnish)
Salt and pepper to taste
1 tbsp olive oil or butter (for greasing the baking dish)
Directions
Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking dish with olive oil or butter.
In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
Stir in the shredded cheddar cheese, bell peppers, onions, and crumbled bacon or sausage if using.
Pour the egg mixture into the prepared baking dish, spreading it out evenly.
Bake for 30-35 minutes or until the eggs are fully set and the top is golden brown.
