Full Recipe:
1 large head of cauliflower
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon paprika
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons olive oil
Fresh parsley for garnish (optional)
Preheat your oven to 425°F (220°C).
Remove the leaves from the cauliflower and trim the stem, leaving the core intact. Slice the cauliflower into 1-inch thick "steaks."
In a small bowl, combine garlic powder, paprika, salt, and black pepper. Brush both sides of each cauliflower steak with olive oil and sprinkle the spice mixture evenly over them.
Place the steaks on a baking sheet lined with parchment paper. Roast in the preheated oven for 20 minutes, flipping halfway through.
After 20 minutes, remove from the oven and sprinkle mozzarella and Parmesan cheese over the cauliflower steaks. Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
Remove from the oven, garnish with fresh parsley if desired, and serve hot.
