1 pound raw shrimp, peeled and deveined (thawed if using frozen)
½ cup breadcrumbs (preferably panko for extra crunch)
¼ cup green onions, chopped
¼ cup red bell pepper, diced (yellow or orange bell pepper works too)
2 cloves garlic, minced
1 tablespoon fresh ginger, minced (or 1 teaspoon ground ginger)
1 teaspoon cayenne pepper (adjust to taste)
1 teaspoon paprika (smoked paprika adds nice depth)
1 egg, beaten
Salt and pepper, to taste
Prepare the Shrimp
Rinse the shrimp under cold water (if frozen, ensure they are fully thawed) and pat them dry with paper towels.
Chop and Mix
Pulse the shrimp in a food processor until coarsely chopped. In a large bowl, combine the chopped shrimp with all remaining ingredients breadcrumbs, green onions, red bell pepper, garlic, ginger, cayenne, paprika, beaten egg, salt, and pepper. Mix thoroughly until well combined.
Form Patties
Shape the mixture into patties about 2–3 inches in diameter. Press firmly so they hold together during cooking.
Heat Oil
In a skillet, pour enough oil to reach about ¼ inch depth. Heat over medium until hot test by dropping a small bit of the mixture in; if it sizzles, it’s ready.
Fry the Patties
