4 boneless, skinless chicken breasts
1 tablespoon olive oil
4 medium white or cremini mushrooms, sliced
½ medium red bell pepper, diced
½ medium green bell pepper, diced
¼ medium white onion, diced
½ cup shredded pepper jack cheese
4 teaspoons Cajun seasoning
4 tablespoons salted butter
Preheat Oven: Preheat your oven to 375°F (190°C).
Prepare Chicken: Using a sharp knife, make a pocket in the center of each chicken breast. Be careful not to cut all the way through.
Sauté Vegetables: Heat olive oil in a skillet over medium heat. Add the sliced mushrooms, diced bell peppers, and diced onion. Sauté for about 4-5 minutes, or until the vegetables are softened. Remove from heat and allow them to cool slightly.
Stuff Chicken: In a small bowl, combine the sautéed vegetables with shredded pepper jack cheese and 2 teaspoons of Cajun seasoning. Stuff each chicken breast with the mixture, securing the opening with toothpicks if necessary.
Cook Chicken: Heat salted butter in a large oven-safe skillet over medium-high heat. Once melted and sizzling, add the stuffed chicken breasts. Cook for 3-4 minutes per side, until golden brown.
Bake Chicken: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
Serve: Remove toothpicks before serving. Garnish with fresh herbs if desired, and serve with your choice of sides.
