Ingredients
4 boneless, skinless chicken breasts
Salt and pepper, to taste
2 tablespoons olive oil
3 cloves garlic, minced
1 cup chicken broth
1/4 cup fresh lemon juice (about 1-2 lemons)
1 teaspoon lemon zest
1 tablespoon cornstarch (optional, for thickening)
2 tablespoons water (optional, for thickening)
Fresh parsley, chopped (for garnish)
Directions
Season the chicken breasts generously with salt and pepper.
Heat olive oil in a large skillet over medium-high heat.
Add the chicken breasts and cook for about 6-7 minutes on each side until golden and cooked through. Remove chicken from skillet and set aside.
In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
Pour in chicken broth, lemon juice, and lemon zest. Stir and bring the mixture to a simmer.
