For the Filling:
1 tablespoon olive oil
½ onion, finely chopped
2 garlic cloves, minced
½ bell pepper, finely chopped
1 pound ground beef
1 teaspoon ground cumin
1 teaspoon smoked paprika
Salt and pepper to taste
½ cup tomato sauce
¾ cup shredded cheddar or mozzarella cheese
For the Empanadas:
1 pack empanada discs or puff pastry (thawed if frozen)
1 egg, beaten (for egg wash)
Prepare the Filling:
Heat olive oil in a skillet over medium heat. Add the chopped onion and sauté until soft, about 3–4 minutes.
Add the minced garlic and chopped bell pepper, cooking for an additional 2 minutes.
Stir in the ground beef, breaking it apart with a spatula. Cook until browned, approximately 6–8 minutes.
Season with ground cumin, smoked paprika, salt, and pepper.
Pour in the tomato sauce and simmer for 3 minutes. Remove from heat and let the mixture cool slightly.
Once cooled, mix in the shredded cheese until well combined.
Assemble the Empanadas:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Place the empanada discs on a clean surface. Spoon 1–2 tablespoons of the beef and cheese mixture onto the center of each disc.
Fold the disc over to create a half-moon shape. Press the edges together firmly to seal. Use a fork to crimp the edges or twist the dough for a decorative seal.
Brush the top of each empanada with the beaten egg to achieve a golden finish during baking.
Bake:
Place the assembled empanadas on the prepared baking sheet.
Bake in the preheated oven for 18–20 minutes, or until the empanadas are golden brown and crispy.
