16 oz (1 lb) farfalle (bowtie) pasta
2 cups grape tomatoes, halved
1½ cups English cucumber, sliced into thick rounds, then quartered
1 large green bell pepper, diced (about 1½ cups)
½ cup diced red onion
¼ cup sliced Kalamata olives, drained
¼ cup sliced black olives, drained
¼ cup chopped fresh parsley
⅔ cup crumbled feta cheese
⅔ cup extra virgin olive oil
¼ cup red wine vinegar
½ tablespoon Dijon mustard
1 garlic clove, minced
2 teaspoons lemon juice
1 teaspoon dried oregano
½ teaspoon dried basil
½ teaspoon salt
¼ teaspoon ground black pepper
Cook the Pasta: Bring a large pot of salted water to a boil. Add the farfalle pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.
