This Bang Bang Chicken Bowl is a delightful fusion of tender chicken, sautéed vegetables, and a creamy, spicy-sweet sauce, all served over a bed of rice. It's a quick and easy dish that's perfect for weeknight dinners or meal prepping.
For the Bowl:
1 lb boneless, skinless chicken breast
1 cup cooked rice (white, brown, or cauliflower)
1 cup mixed vegetables (broccoli, bell peppers, carrots)
2 tablespoons olive oil
Salt and pepper, to taste
For the Bang Bang Sauce:
½ cup mayonnaise
2 tablespoons sriracha
1 tablespoon honey
1 teaspoon garlic powder
1 teaspoon lime juice
Cook the Chicken:
Season the chicken breasts with salt and pepper. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the chicken for 6–7 minutes per side, or until fully cooked and no longer pink in the center. Remove from heat, let it rest for a few minutes, then slice into bite-sized pieces.
Sauté the Vegetables:
In the same skillet, add the remaining tablespoon of olive oil. Add the mixed vegetables and sauté for 4–5 minutes until they are tender-crisp. Season with a pinch of salt and pepper.
Prepare the Sauce:
In a small bowl, whisk together the mayonnaise, sriracha, honey, garlic powder, and lime juice until smooth and well combined. Adjust the sriracha to your preferred spice level.
Assemble the Bowl:
Divide the cooked rice among four bowls. Top each with an equal portion of sautéed vegetables and sliced chicken. Drizzle the Bang Bang sauce generously over the top.
Serve:
Gently toss the ingredients together before serving to ensure everything is coated with the sauce. Enjoy immediately.
