1.5 lbs (680g) ground beef
1 packet (1 oz) taco seasoning
1 can (14 oz) fire-roasted diced tomatoes
2 tbsp apple cider vinegar
1 can (14 oz) black beans, drained and rinsed
1 cup frozen corn kernels
1.5 cups salsa (choose your preferred heat level)
6 oz (170g) tortilla chips
1.5 cups shredded Mexican blend cheese, divided
Optional toppings: sliced avocado, chopped cilantro, sour cream, jalapeños
Prepare the Taco Meat: In a slow cooker, combine the ground beef, taco seasoning, fire-roasted diced tomatoes, apple cider vinegar, and salsa. Break up the ground beef into small pieces. Cook on high for 2 hours or low for 4 hours.
