2¼ lbs boneless, skinless chicken breasts
4½ cups Alfredo sauce, divided
1 teaspoon minced garlic
½ teaspoon black pepper
4 cups refrigerated three cheese tortellini
¼ cup shredded Parmesan cheese
1 tablespoon chopped fresh parsley (optional)
In a crockpot, combine 2½ cups of Alfredo sauce, minced garlic, and black pepper. Stir to mix.
Add the chicken breasts to the sauce mixture. Cover and cook on high for 3–4 hours, or until the chicken is fully cooked.
Once cooked, shred the chicken using two forks or cut it into bite-sized pieces. Return the shredded chicken to the crockpot.
Add the remaining 2 cups of Alfredo sauce and the refrigerated three-cheese tortellini to the crockpot. Stir to combine.
Cover and cook on high for an additional 15 minutes, or until the tortellini is tender and heated through.
