Lemon Pretzel Salad is a refreshing dessert that blends the sweet and tart flavors of lemon with the salty crunch of pretzels. It's made with a pretzel crust, a creamy cheesecake like filling, and a tart lemon jello layer on top. The contrast of textures and flavors makes it a perfect treat for any occasion.
Full Recipe:
Ingredients:
For the Pretzel Crust:
2 cups crushed pretzels
3/4 cup unsalted butter, melted
1/4 cup sugar
For the Cream Cheese Layer:
8 oz cream cheese, softened
1 cup whipped topping (such as Cool Whip)
1 cup powdered sugar
For the Lemon Jello Layer:
1 package (6 oz) lemon-flavored gelatin
2 cups boiling water
1 cup cold water
Directions:
Prepare the Pretzel Crust:
Preheat your oven to 350°F (175°C).
In a medium bowl, combine crushed pretzels, melted butter, and sugar. Mix until well combined.
Press the mixture firmly into the bottom of a greased 9x13-inch baking dish.
Bake for 10 minutes, then remove from the oven and let cool completely.
Make the Cream Cheese Layer:
In a separate bowl, beat together softened cream cheese, powdered sugar, and whipped topping until smooth and well combined.
Spread this mixture over the cooled pretzel crust.
Prepare the Lemon Jello Layer:
In a bowl, dissolve the lemon gelatin in 2 cups of boiling water. Stir until fully dissolved.
Add 1 cup of cold water to the gelatin and mix well.
Let the gelatin mixture cool to room temperature (do not let it set completely).
Once cooled, pour the lemon gelatin over the cream cheese layer.
Chill and Serve:
Refrigerate the salad for at least 4 hours or until the gelatin has set and the dessert is firm.
Once set, cut into squares and serve chilled.
