For the Meatloaf:
2 lbs ground beef (80/20 blend recommended)
1 cup plain or seasoned breadcrumbs
2 large eggs
1 medium onion, finely chopped
1/4 cup ketchup
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon dried oregano
Salt and pepper to taste
For the Glaze:
1/2 cup ketchup
2 tablespoons brown sugar
1 tablespoon apple cider vinegar
Preheat the Oven: Set your oven to 375°F (190°C).
Prepare the Meat Mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, eggs, chopped onion, ketchup, Worcestershire sauce, garlic powder, oregano, salt, and pepper. Mix until just combined; avoid overmixing to keep the meatloaf tender.
Shape the Meatloaf: Transfer the mixture into a lightly greased loaf pan or shape it into a freeform loaf on a baking sheet lined with parchment paper.
Prepare the Glaze: In a small bowl, mix together the ketchup, brown sugar, and apple cider vinegar until smooth.
Glaze the Meatloaf: Spread half of the glaze over the top of the meatloaf.
Bake: Place the meatloaf in the preheated oven and bake for 60–75 minutes, or until the internal temperature reaches 160°F (70°C).
Final Glaze: During the last 10 minutes of baking, spread the remaining glaze over the meatloaf.
Rest and Serve: Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. Serve with your favorite sides and enjoy!
