Ingredients
2 cucumbers, thinly sliced
2 apples, thinly sliced (preferably Honeycrisp or Granny Smith)
1/4 cup red onion, thinly sliced
1/4 cup fresh parsley, chopped
1/4 cup walnuts or almonds, chopped
1/4 cup crumbled feta cheese (optional)
2 tablespoons olive oil
1 tablespoon lemon juice

Directions
