Texas Cowboy Stew is a hearty, one-pot meal that combines the rich flavors of ground beef, smoked sausage, bacon, and a medley of vegetables. Inspired by traditional cowboy fare, this stew offers a comforting and filling dish perfect for family dinners or gatherings.

1 lb ground beef
1 (12–14 oz) package smoked kielbasa sausage, sliced into ½-inch pieces
6 slices bacon, chopped
1 medium onion, chopped
3 cloves garlic, finely chopped
3 tbsp all-purpose flour
1 tbsp chili powder
1 tsp ground cumin
1 tsp kosher salt
½ tsp black pepper
2 cups low-sodium chicken broth
2 (15 oz) cans ranch-style beans or chili beans, with their liquid
1 (15 oz) can sweet corn, drained
1 (14 oz) can diced tomatoes with green chilies, with their liquid
2 russet potatoes, peeled and cut into 1-inch cubes
In a large Dutch oven, cook the chopped bacon over medium heat until golden and crisp, about 5–7 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate.
Add the sliced kielbasa to the drippings in the pot and cook until lightly browned and fragrant, about 3–5 minutes. Remove to the plate with the bacon. Drain off all but 1 tablespoon of fat.
Add the ground beef, chopped onion, and minced garlic to the drippings in the pot. Cook, stirring frequently and breaking up the meat with a wooden spoon, until lightly browned, about 5–7 minutes.
Sprinkle in the flour, chili powder, cumin, salt, and pepper. Cook until the flour smells toasty, about 1–2 minutes.
Stir in the chicken broth, beans (with their liquid), corn, diced tomatoes with green chilies (with their liquid), and potatoes. Bring to a boil.
Return the bacon and sausage to the pot. Reduce the heat to medium-low, cover, and simmer until the potatoes are tender and the flavors are melded, about 1 hour.
Serve the stew sprinkled with chopped fresh parsley.
