Could anyone give me the names of some popular periodicals published in Saigon before 1975?

There's a massive amount out there, and you may want to specify which fields. But here's a
start (I'm
excluding newspapers).
* General: Bach Khoa (one of few, if not the only, that ran uninterrupted from 1957 to
1975)
* Politics/Society: Doi, Van nghe tien phong,
* Literature: Sang tao, Van.
* Buddhist: An lac, Tu quang.
* Catholic: Trai tim duc me, Duc me hang cuu giup.
Many are available via ILL, on microfilm or paper.

Buddhist Peace Movement in the South of Vietnam from 1963 to 1970." I'll just start with Dan

If you are interested in newspapers and periodicals
that covered the Buddhist Peace Movement then Hai
Trieu Am, Thien My, Dai Tu Bi, Giu Thom Que Me are the
best periodicals. Chanh Dao, Chinh Luan, Dat To, Dan
Ta, Duoc Nha Nam, Dai Dan Toc, Dien Tin are good
newspapers to look into. Good luck!

I recall reading that Fr. Chan Tin and a group of dissident Catholics
edited a newspaper in the south at that time, Doi Dien. Would that have
covered the Buddhist peace movement?
