Cheese Bread

芝士包, 我同亞女最愛, 今次整這個係卷芝士在包包內, 原食譜係一條過, 我就為了方便當午餐, 分開了九個小的, 大盤五個, 細盤四個, 包包吓吾夠 cheddar cheese, 唯又用 swiss cheese. 這個是我試Marcy Goldman一書內的第五個包包食譜, 全部都發酵強勁, 包質鬆軟, 又夠味, 又放得耐, 深得我心呢!

包包好絲絲, 入面的窿就是卷起咗溶化了的芝士! 外皮還是脆的呢!再睇吓....芝士上的一点点是 black pepper, 食譜叫落 paprika, 我冇.組織真係好好.大細兩個 loaf pans, 一共用了 4 1/2 cups 麵包粉, 麵檲非常好操作!

Recipe: adapted from Marcy Goldman's The New Best of Better Baking.comLogan's famous cheese breadMakes 2 8X4 loavesIngredients: 1 1/3 cup warm water2 tbsp instant yeast2 eggs2 oz softened unsalted butter2 tsp sugar2 1/2 tsp salt1 cup shredded cheddar cheese4 1/2 cups bread flour

Filling

freshly ground black pepper for sprinkling

8-12 oz cheddar cheese, a mixture of chunks& shredded

1. Spray loaf pans with non-stick cooking spray

2. Hand whisk the warm water & yeast in the mixing bowl. Stir in the eggs, butter, salt, sugar, cheese & flour. Knead in the mixer for 8-10 minutes (add more flour if needed) to form a soft dough. Place in a lightly greased bowl. Cover & let rise til almost doubled.

3 Deflate the dough and divide it in half. Roll out each dough, sprinkle with black pepper & cheese(Reserve some for sprinkling). Roll up jelly roll style. Place in prepared pans, cover with plastic & let rise until it puff up 1 inch above the pan rim.

4. Bake in preheated 375F oven for 35 minutes. Sprinkle with shredded cheese & bake for additional 5 minutes or until cheese melts.
