This meatloaf recipe from The Pioneer Woman combines ground beef with a flavorful blend of ingredients, topped with a tangy glaze, and wrapped in bacon for added richness. It's a comforting and hearty dish that's perfect for family dinners.
For the Meatloaf:
1 cup whole milk
6 slices white bread
2 lbs ground beef
1 cup freshly grated Parmesan cheese
1 teaspoon salt
½ teaspoon freshly ground black pepper
¼ teaspoon seasoned salt
⅓ cup minced flat-leaf parsley
4 large eggs, beaten
8 to 12 slices thin-cut bacon
For the Glaze:
1½ cups ketchup
⅓ cup brown sugar
1 teaspoon dry mustard
Dash or two of hot sauce (to taste)
Preheat the Oven: Set the oven to 350°F (175°C).
Soak the Bread: In a large bowl, pour the milk over the white bread slices and let them soak for several minutes until fully saturated.
Prepare the Meat Mixture: Add the ground beef, grated Parmesan cheese, salt, black pepper, seasoned salt, minced parsley, and beaten eggs to the soaked bread. Using clean hands, mix the ingredients until well combined.
Form the Meatloaf: Transfer the meat mixture to a broiler pan lined with foil. Shape it into a loaf.
Wrap with Bacon: Lay the bacon slices over the top of the meatloaf, tucking them underneath.
Prepare the Glaze: In a small bowl, combine the ketchup, brown sugar, dry mustard, and hot sauce. Stir until well mixed.
Apply the Glaze: Pour one-third of the glaze over the top of the meatloaf.
Bake: Place the meatloaf in the preheated oven and bake for 45 minutes. Afterward, pour another third of the glaze over the meatloaf and bake for an additional 15 minutes.
Serve: Remove the meatloaf from the oven and let it rest for a few minutes before slicing. Serve with the remaining glaze on the side.
