2 lbs beef chuck roast, cut into 1½-inch cubes
1 tablespoon olive oil
1 large onion, chopped
4 cloves garlic, minced
1 cup red wine (or beef broth for alcohol-free version)
4 cups low-sodium beef broth
3 medium Yukon Gold potatoes, diced
3 medium carrots, sliced
2 celery stalks, chopped
1 cup frozen peas
2 bay leaves
2 teaspoons dried thyme
Salt and freshly ground black pepper, to taste
2 tablespoons all-purpose flour (or cornstarch for gluten-free)
Fresh parsley, chopped (for garnish)
Prepare the Beef: Pat the beef cubes dry with paper towels. Season with salt, pepper, and flour, tossing to coat evenly.
