This hearty and flavorful meatloaf combines the rich taste of caramelized onions with savory ground beef, creating a comforting dish reminiscent of French onion soup. Topped with melted cheese and optional gravy, it's perfect for family dinners or special occasions.
For the Meatloaf:
2 pounds ground beef (or a mix of beef and pork)
1 cup breadcrumbs (or almond flour for a gluten-free option)
½ cup shredded Swiss or Gruyère cheese
2 large onions, thinly sliced
2 tablespoons olive oil
1 teaspoon sugar (optional, to enhance sweetness)
2 cloves garlic, minced
1 teaspoon dried thyme
1 egg
Salt and pepper to taste
For the Optional Gravy:
1 cup beef broth
1 tablespoon flour (or cornstarch for gluten-free)
Salt and pepper to taste
Caramelize the Onions:
Heat olive oil in a skillet over medium heat.
Add sliced onions and a pinch of salt.
Cook, stirring occasionally, for 20–25 minutes until onions are golden brown and soft.
Optional: Stir in sugar during the last few minutes to enhance sweetness.
Remove from heat and set aside to cool.
Prepare the Meatloaf Mixture:
In a large bowl, combine ground beef, breadcrumbs, shredded cheese, minced garlic, dried thyme, and egg.
Season with salt and pepper.
Gently fold in the cooled caramelized onions, being careful not to overmix.
Shape and Bake:
Preheat oven to 375°F (190°C).
Transfer the meat mixture to a baking sheet lined with parchment paper or a lightly greased loaf pan.
Shape into a loaf and, if desired, sprinkle additional cheese on top.
Bake for 50–60 minutes, or until the internal temperature reaches 160°F (71°C).
Prepare the Optional Gravy:
While the meatloaf is baking, combine beef broth and flour in a saucepan over medium heat.
Whisk until smooth and bring to a simmer.
Cook for 5–7 minutes until the gravy thickens.
Season with salt and pepper to taste.
Serve:
Once baked, let the meatloaf rest for 10 minutes before slicing.
Serve with the optional gravy spooned over the top.
