Full Recipe:
3–4 boneless, skinless chicken breasts
Juice of 2 fresh limes
2 tablespoons extra virgin olive oil
3 garlic cloves, minced
1/4 cup fresh cilantro, chopped (or parsley as a substitute)
Salt and pepper to taste
2 ripe avocados, sliced
Lime wedges, for serving
Extra cilantro for garnish
Marinate the Chicken: In a bowl, combine lime juice, olive oil, minced garlic, chopped cilantro, salt, and pepper. Place the chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Seal and refrigerate for at least 30 minutes, allowing the flavors to meld.
Prepare the Grill or Oven: Preheat your grill to medium-high heat (around 375°F/190°C) or set your oven to broil mode. If using an oven safe dish, lightly grease it.
Cook the Chicken: Remove the chicken from the marinade and discard any leftover marinade. Grill each breast for about 6–8 minutes per side until the internal temperature reaches 165°F (75°C). Alternatively, bake in the oven for about 20–25 minutes, flipping halfway through.
Slice and Serve: Allow the cooked chicken to rest for a few minutes before slicing it into strips. Serve the sliced chicken alongside avocado wedges. Garnish with additional cilantro and lime wedges for an extra burst of flavor.
