8 slices thick-cut bacon
1 pound ground pork sausage
4 slices mild cheddar cheese
1 tablespoon unsalted butter
8 large eggs, beaten
½ teaspoon kosher salt
¼ teaspoon black pepper
12 slices white bread, toasted
1 large avocado, pitted, peeled, and sliced
¾ cup cowboy butter, softened, divided
Prepare the Bacon:
Preheat the oven to 425°F (220°C).
Place the bacon slices on a baking sheet lined with aluminum foil.
Bake for 25–30 minutes, or until crispy.
Transfer to a paper towel-lined plate to drain excess grease.
Cook the Sausage Patties:
Divide the ground pork sausage into four equal portions.
Shape each portion into a patty slightly larger than the bread slices.
In a skillet over medium heat, cook the patties for about 3–4 minutes per side, or until browned and cooked through.
Place a slice of cheddar cheese on each patty during the last minute of cooking to melt.
Transfer to a paper towel-lined plate to drain any excess grease.
Scramble the Eggs:
In the same skillet, melt the butter over medium heat.
Add the beaten eggs, salt, and pepper.
Cook, stirring gently, until the eggs are set but still moist.
Remove from heat and set aside.
