2 lbs boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
1 cup pineapple juice
1/2 cup brown sugar
1/3 cup low-sodium soy sauce
1/4 cup ketchup
1 red bell pepper, chopped
1 green bell pepper, chopped
1 cup pineapple chunks, drained
1 teaspoon garlic powder

2 tablespoons cornstarch
2 tablespoons cold water
