4 boneless, skinless chicken breasts
1 teaspoon garlic powder
1 teaspoon kosher salt
½ teaspoon ground black pepper
¼ teaspoon onion powder
1 tablespoon olive oil
1 tablespoon unsalted butter
1 cup low sodium chicken broth
1 (5.2 oz) package Boursin cheese (Garlic & Fine Herbs flavor)
1 handful fresh spinach (optional)
Chopped fresh parsley (optional, for garnish)
Prepare the Chicken: Pat the chicken breasts dry and season both sides with garlic powder, salt, pepper, and onion powder.
Sear the Chicken: In a large skillet, heat olive oil and butter over medium-high heat. Add the chicken breasts and cook for 6–7 minutes on each side until golden brown and the internal temperature reaches 165°F (74°C). Remove the chicken from the skillet and set aside.
Make the Sauce: In the same skillet, pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Add the Boursin cheese and stir until the cheese melts and the sauce becomes smooth and creamy.
