2 tablespoons olive oil
4 boneless, skinless chicken breasts
Salt and pepper, to taste
1 pound pasta (penne, rigatoni, or spaghetti)
2 cups marinara sauce
1½ cups shredded mozzarella cheese
Fresh basil or parsley, for garnish
Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Cook the Chicken: While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper. Add the chicken to the skillet and cook for 6–7 minutes per side, or until the internal temperature reaches 165°F (74°C). Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.
Combine Pasta and Sauce: In the same skillet, add the marinara sauce and bring to a simmer over medium heat. Add the cooked pasta and toss to coat evenly with the sauce.
Add Chicken and Cheese: Add the sliced chicken on top of the pasta. Sprinkle the shredded mozzarella cheese over the chicken and pasta. Cover the skillet and cook for 2–3 minutes, or until the cheese is melted and bubbly.
Serve: Garnish with fresh basil or parsley before serving.
