1 (15 oz) can wild salmon, drained and flaked
½ cup almond meal or breadcrumbs
2 large eggs
½ cup chopped onion
1 cup chopped spinach
1 garlic clove, minced
2 tablespoons lemon juice
3 tablespoons hummus (original or roasted red pepper)
¼ cup crumbled feta cheese
½ teaspoon salt
2 tablespoons capers (optional)
Extra virgin olive oil, for cooking
Prepare the Salmon Mixture:
In a large bowl, combine the drained and flaked salmon with the almond meal or breadcrumbs.
Add the eggs, chopped onion, chopped spinach, minced garlic, lemon juice, hummus, crumbled feta cheese, salt, and capers (if using).
Mix thoroughly until all ingredients are well incorporated.
Form the Patties:
Divide the mixture into 8 equal portions.
Shape each portion into a patty, about ½ inch thick.
