Full Recipe:
3 lbs fresh large strawberries
8 oz cream cheese, softened
1 cup powdered sugar
1 tsp vanilla extract
1½ cups heavy whipping cream
¼ cup graham cracker crumbs
Prepare the Strawberries: Wash and dry the strawberries thoroughly. Slice each strawberry in half lengthwise, keeping the stems attached.
Hollow Out the Strawberries: Using a small paring knife or melon baller, gently carve out a small piece of strawberry flesh from the flat side of each half to create a small bowl.
Make the Cheesecake Filling: In a mixing bowl, whip the heavy whipping cream on high speed until stiff peaks form, about 5-7 minutes. In a separate bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Fold in the whipped cream until well combined.
Fill the Strawberries: Transfer the cheesecake mixture into a piping bag or a resealable plastic bag with the tip cut off. Pipe the filling into the hollowed-out center of each strawberry half.
Garnish and Serve: Sprinkle the graham cracker crumbs on top of the filled strawberries. Serve immediately or refrigerate until ready to serve.
