Dragon Chicken is a fiery Indo-Chinese fusion dish that combines crispy fried chicken strips with a bold, spicy sauce. For the Chicken:
1 lb (450g) boneless, skinless chicken thighs or breasts, cut into thin strips
1 egg white
2 teaspoons dark soy sauce
½ teaspoon salt
1 teaspoon pepper
1 teaspoon Kashmiri red chili powder (or cayenne pepper)
1½ tablespoons cornflour (cornstarch)
1½ tablespoons all-purpose flour
Oil for frying
For the Sauce:
1 tablespoon sesame oil
2 tablespoons garlic, minced
1 tablespoon ginger, minced
2–3 dried red chilies (or crushed red pepper flakes)
½ cup tomato ketchup
2 tablespoons soy sauce
1 tablespoon chili garlic sauce
1 tablespoon vinegar
1 tablespoon sugar or honey
¼ cup water (to loosen the sauce, if needed)
Salt to taste
Garnishes:
Sliced green onions
Toasted sesame seeds
Thin strips of fried onion or bell pepper for crunchl
Marinate and Coat the Chicken:
In a bowl, mix sliced chicken with egg white, cornstarch, salt, and pepper. Let sit for 10–15 minutes while you prep the sauce.
Fry the Chicken:
Heat oil in a skillet over medium-high heat. Fry chicken pieces in batches until golden and crispy. Drain on paper towels.
Make the Sauce:
In the same skillet, add sesame oil. Sauté minced garlic and ginger until aromatic. Add dried red chilies and cook briefly.
Stir in tomato ketchup, soy sauce, chili garlic sauce, vinegar, sugar, and water. Cook until the sauce thickens slightly. Adjust salt to taste.
Combine Chicken and Sauce:
Add the fried chicken strips to the sauce. Toss to coat evenly. Cook for an additional 1–2 minutes to allow flavors to meld.
Garnish and Serve:
Transfer the dragon chicken to a serving platter. Garnish with sliced green onions, toasted sesame seeds, and optional fried onion or bell pepper strips. Serve immediately.
