For the Crust:
2 ½ cups graham cracker crumbs (about 2 sleeves)
½ cup unsalted butter, melted
For the Filling:
4 oz cream cheese, softened
½ cup unsalted butter, softened
2 cups powdered sugar, sifted
20 oz can crushed pineapple, drained well
8 oz container Cool Whip, thawed
Prepare the Crust:
Preheat the oven to 300°F (150°C).
In a medium bowl, combine graham cracker crumbs and melted butter until well mixed.
Press the mixture firmly into the bottom of a 9×9-inch square baking dish.
Bake for 8–10 minutes, then remove from the oven and allow to cool completely.
Prepare the Filling:
In a large mixing bowl, beat together softened cream cheese and butter until smooth and creamy.
Gradually add sifted powdered sugar, beating until fully incorporated.
Stir in 1 heaping tablespoon of the drained crushed pineapple.
