1 pound ground beef
1 medium onion, diced
1 red bell pepper, diced
2 cloves garlic, minced
1 cup long-grain white rice
1½ cups beef broth
1 (10 oz) can diced tomatoes with green chilies (such as Rotel), undrained
1 tablespoon Worcestershire sauce
Salt and pepper to taste
1 cup shredded cheddar cheese
Chopped fresh parsley for garnish (optional)
Brown the Ground Beef: In a large skillet, cook the ground beef over medium-high heat until browned, breaking it apart as it cooks. Drain any excess fat.
Sauté Vegetables: Add the diced onion, red bell pepper, and minced garlic to the skillet. Season with salt and pepper. Cook, stirring occasionally, for about 3 minutes, until the vegetables are tender.
Add Rice and Liquids: Stir in the uncooked rice, beef broth, diced tomatoes with their juices, and Worcestershire sauce. Bring the mixture to a boil.
