Full Recipe:
1 lb boneless, skinless chicken breasts or thighs, diced
1 tbsp olive oil
1 cup chopped carrots
1 cup chopped celery
1 cup chopped onion
3 cloves garlic, minced
4 cups low sodium chicken broth
1 cup reduced fat milk (or milk alternative)
1 (16 oz) package potato gnocchi
2 cups fresh spinach
1 tsp dried thyme
Salt and pepper, to taste
Cook the Chicken
Heat olive oil in a large pot over medium heat. Add the diced chicken and cook until browned and thoroughly cooked about 5–7 minutes. Remove and set aside.
Sauté the Vegetables
