Full Recipe:
12 oz (340 g) short pasta (such as fusilli or farfalle)
2 tablespoons extra virgin olive oil
Juice and zest of 1 lemon
Salt and freshly ground black pepper, to taste
1 cup cherry tomatoes, halved
1/2 cup fresh basil leaves, torn
1/4 cup pine nuts, toasted
8 oz (225 g) burrata cheese
1/4 cup freshly grated Parmesan cheese
Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
Prepare the Lemon Dressing: In a large bowl, whisk together the olive oil, lemon juice, lemon zest, salt, and pepper until well combined.
Combine Pasta and Dressing: Add the cooled pasta to the bowl with the lemon dressing. Toss to coat the pasta evenly with the dressing.
Add Vegetables and Nuts: Gently fold in the halved cherry tomatoes, torn basil leaves, and toasted pine nuts.
Incorporate Burrata: Tear the burrata into bite sized pieces and add them to the salad. Toss gently to combine, ensuring the burrata remains intact and adds creamy pockets throughout the salad.
Finish and Serve: Sprinkle the grated Parmesan cheese over the top of the salad. Serve immediately at room temperature, or refrigerate for about 30 minutes to allow the flavors to meld.
